Portable Jet System steam cleaner cleaning bakery pans on a production line using dry vapour steam for chemical-free clean-in-place (CIP) performance.
The Jet System portable steam cleaner cleans bakery pans in place — chemical-free, fast, and fully automatic.

The Jet System was originally developed for clean-in-place (CIP) cleaning of modular conveyor
belts in the food industry, but we have increasingly found powerful new applications for it in
industrial pan cleaning and industrial tray cleaning. It is now being used for bakery pan
cleaning
and bakery tray cleaning in four countries, helping major food factories stay ahead of
hygiene challenges while cutting costs and downtime.

Industrial pans and trays are used throughout the food processing industry, including in the
production of bread, doughnuts, bagels, pastries, cakes, biscuits, cookies, croissants, rolls, muffins,
and many other baked goods. Keeping these bakery pans and trays clean is vital to avoid
contamination, ensure consistent product quality, and extend their lifespan.

Traditional industrial pan cleaning is often done sporadically, after build-up has already formed.
This makes it slow, labour-intensive and can damage pans, reducing their lifespan. The Jet System
changes this completely. It uses high-temperature steam cleaning followed by an airknife, and
there is no need to remove pans from the production line. In most circumstances it can also clean
during production, helping reduce downtime and preventing the build-up that normally becomes
difficult to remove.

Because it uses chemical-free, dry steam and no abrasive contact, the Jet System provides powerful
sanitisation while causing no wear on the bakery pans. Compared to using brushes or scraping,
which gradually wear away pan coatings and deform edges, the Jet System is completely non-contact.
We routinely see industrial pan lifespans extended by 5–10 times versus traditional
methods. The system is fully portable, allowing hygiene teams to use it not only on industrial pans
and trays but also across all of the factory’s modular conveyor belts, bringing consistent hygiene
standards and reliable sanitisation to the entire site. It delivers fully automatic, clean-in-place (CIP)
performance, bringing the benefits of automated CIP cleaning to bakeries and food processing
plants without the need for drainage or modification to existing lines.

Focused Steam Power for Pan and Tray Cleaning

Working in combination with KHD’s 18 kW steam generator, manufactured in the UK, the Jet
System delivers a constant supply of dry vapour steam for industrial cleaning. This automated
steam cleaning system channels energy through a high-speed spinning manifold that sweeps across
the width of each bakery pan or tray, concentrating steam on a tight area for maximum impact. The
result is powerful vapour steam cleaning that removes grease, sugars, fats, and residues while
supporting fully automated clean-in-place steam cleaning. By integrating a portable automatic
steam cleaner into pan and tray hygiene routines, food producers gain a sustainable, chemical-free
solution that eliminates abrasive wear, improves hygiene, and reduces downtime.

While we recommend the Jet System for most bakeries — since it can be deployed flexibly across
pans, trays, and conveyor belts throughout the factory — KHD also manufacture dedicated pan
and tray cleaners with multiple fixed cleaning heads. These in-line systems are ideal for high-throughput
bakeries that want a permanent solution focused specifically on bakery pans or trays.

Frequently Asked Questions

Can the same system clean conveyor belts as well?

Yes. The Jet System is portable and can also clean modular conveyor belts, wire mesh belts, and other bakery equipment, providing a full-site hygiene solution.

Can the Jet System be integrated into existing bakery lines?

Yes. The portable design allows it to be deployed on almost any bakery line without modification or drainage requirements, making integration simple and cost-effective.

Can the Jet System clean residues like sugar and glaze?

Yes, the high-temperature dry steam softens and lifts baked-on sugars, fats, and glazes without scrubbing or chemicals. It’s especially effective for sticky residues that brushes struggle with.

How long does it take to clean a set of bakery pans?

Cleaning time depends on contamination level and line speed. If the pans are moving slowly and the system is being run regularly to keep on top on contamination then sometimes a complete clean can be achieved in a single pass. If not You can leave the system running for multiple passes and let it focus on sections at a time for a deeper clean.

Will steam cleaning make the pans wet?

The Jet System uses dry vapour steam, which contains very little water. Surfaces are sanitised and left almost dry immediately after cleaning. If they are cold, metal pans then some condensation is inevitable. We normally reccomend using the jet system in conjunction with an air knife or use a specialised angled attachment on the Jet system if debris or condensation are an issue.

Can it clean pans while product is still being baked?

Yes. Many factories run the Jet system during production. In fact we reccomend it becuase:

  • It doesn’t give contamination time to set or harden
  • If pans are still warm so they are more likely to be left 100% dry
  • Regular cleaning helps to extend the life of the coating which makes cleaning easier

Do I need to modify my line to install it?

No modifications are needed. The Jet System is portable and can be positioned above or alongside existing conveyors without drainage or permanent fittings.

How much water does it use?

The amount of water used will depend on which steam generator is being used. Generally we reccomend the KHD18 which uses less than 25 L per hour to generate over 40,000L of dry steam.
